Red pepper

Red pepper is a fully mature peppercorn. It comes from the Piper Nigrum vine, native to south-west India. Although green, black, white and red pepper all come from the same fruit, it is the ripening and processing that determines their colour. The most famous varieties include Kampot pepper, Mondolkiri pepper, Phu Quoc pepper, etc.

Red pepper is harvested when the berries reach a pronounced red colour. The berries are then fragrant and very sweet. Unlike black pepper, which is dried in the sun, red pepper is dried in the shade to preserve its colour and specific aromas. It is this long process that makes it rarer and more expensive.

How is red pepper obtained?

Red pepper comes from the same plant, Piper Nigrum, as black and green pepper. Its production differs according to the ripeness at which it is harvested. To obtain red pepper, the berries must be left to ripen until they reach a beautiful shade of red.
