A first smell releases delicious, sweet aromas, with milky notes evoking yoghurt, warm notes of angelica reminiscent of lemon, candied citron, desert lime, very ripe oranges, orange peel or orange blossom. We can also smell base notes of bread crusts, grapes, hay and chocolate.
Our perfect combination : This pepper will beautifully lift white and red meats, marrowbone, lamb or kidney. You can also use it with anchovies or on a cooked salad. It can be a substitute for black pepper.
When ground, fresh notes of menthol and eucalyptus also emerge.
To taste, the spice has an intensity of 5-6 on the Comptoir des Poivres scale, which emerges gradually.
Our Colombian pepper comes from Putumayo, one of the 32 departments in Colombia, in the south-west of the country, on the region bordering Ecuador and Peru.
Our red pepper is harvested at full maturity.
