We found our white lime or "limou amani" in the Shyraz region in the southeast.
The limou amani, a citrus latifolia variety, is a small lime that has matured and dried naturally in the sun directly on the tree.
It is not harvested.
The lime peel hardens and turns a yellowish to light brown colour in the sun, and becomes brittle.
The pulp turns brown, dries out and takes on candied notes.
