The Kaffir lime, Citrus hystrix is native to the Indonesian island of Sumbawa, east of Bali in the Sunda archipelago, called Kaffir lime by Western sailors.
The fruit is highly prized for its very fragrant rind and adored in Indonesian, Thai, Cambodian, Laotian and, since the beginning of the twentieth century, on the island of Madagascar cuisines.
